The ingredients used in African delicacies are much alike to those used in Indian delicacies except only that the Indian foods are generally spicier than the African foods. Among all ingredients coconut is very common in many African recipes. One such recipe with coconut is the Coconut Paratha which is a popular food in Africa and is also liked by many Indians.
The recipe of Onion Kulcha is as follows -
Ingredients:
>> Maida (Refined wheat flour) - 4 cups
>> Coconut milk - 1½ cup.
>> Salt - ½ tsp.
>> Oil or Ghee for frying parathas.
Methods:
1. Sift the flour and the salt and keep in a mixing bowl. While adding the coconut milk slowly, knead the flour into dough.
2. Roll the dough and make small round shaped pieces each of roughly 2½” diameter. Brush the round balls with oil and roll into elongated portions and then twist into a ring, place on a floured board.
3. Roll out each ball with a rolling pin using dry flour as required to prevent it from sticking (flatten it on a floured board).
4. Place the flattened balls or parathas one by one on a plate and put it in microwave to grill 10 minutes on both sides. Some people prefer to fry these parathas instead of grilling. For frying put the flattened parathas one by one on a preheated skillet. Turn after cooking for 1-2 minute. After a minute apply refined oil or ghee around the edges and turn again. Fry on a low heat till the brownish color appears on both sides and crispy.
Coconut parathas are ready; it tastes really nice. It can be taken along with any vegetable etc. as per one’s choice.
