Crepes with Orange Sauce Recipe


Simple recipes with emphasis on various types of herbs give French cuisine a distinct flavour and taste. In this blog we will discuss a number of French recipes and also the tastes of French Cuisine in separate posts. Crepes with Orange Sauce is one such item from French cuisine. Here is the recipe -

Ingredients:
For Crepes -
·         1 cup of flour.
·         2 tbsp castor sugar.
·         2 eggs lightly beaten.
·         2 pinches of salt.
·         4-5 tbsp water.
·         1 cup milk.
·         1 tbsp orange essence.
·         50 gm of butter for frying.
For Orange Sauce -
·         Unsalted butter - 6 tbsp
·         Sugar (ground) - ¼ cup
·         Grated rind of 1 orange
·         Grated rind of 1 lemon
·         Orange juice - 1 cup
·         Lemon juice - ½ tsp
For Garnishing - Orange segments.
Method:
=> In a mixing bowl sift together the flour, salt, sugar and slowly mix in the eggs. For this purpose use an electric beater to beat the eggs adding a little flour at a time till all the flour is used.
=> Slowly whisk in the milk and water to make a smooth batter. Whisk in the essence and blend well. Keep the batter aside.
=> Heat the melted butter in a non-sticky pan, pour in only 2 tbsp of the batter and very quickly tilt and rotate the pan so as to cover or coat its base with a thin layer of the batter. Keep the pan on flame for about 1-2 minute until the top is set and the base is golden. With a flat spoon lift the edge and carefully turn over the crepes and cook the other side for just 20-30 seconds. Then gently slide it out of the pan into a plate. Repeat this method to prepare all the crepes. 
To Prepare the Orange Sauce
=> Melt the butter and stir in the sugar, orange and lemon rinds and their juices. Blend well.
=> Place a crepe in the pan with the brown side down and swirl the pan gently so that the crepe is coated with the sauce. Fold it half then in this position fold it again to form a triangular shape (like Indian Parathas).
=> Coat all the crepes in the same way.
=> Alternately, after preparing the crepes place it on the plates and top it with the prepared orange sauce on individual plate  
Garnishing -
Serve after garnishing with the segments of orange.
