Mandazi Recipe

As already discussed in our earlier posts in this blog, the recipes of African Cuisine are very much similar to those of Indian Cuisine. Mandazi is an African recipe which looks almost similar to that of Indian Puri or Kachori (a kind of stuffed bread).
The recipe of Mandazi is as follows -
Ingredients:
>> Maida (Refined wheat flour) - 4 cups
>> Baking powder / Yeast - 1tsp.
>> Sugar (ground) - 3 tbsp.
>> Egg (beaten) - 1 no.
>> Milk - ½ cup.
>> Cardamom powder - 1 tsp.
>> Oil or Ghee for deep frying.
Methods:
1.  Sift the flour with cardamom powder, baking powder or yeast and sugar. Place in a mixing bowl. While adding the milk slowly first then add the beaten egg, knead the flour into a pliable dough.
2.  Roll the dough and make small round shaped pieces each of roughly 2½” diameter. Brush the round balls with oil, roll out each ball with a rolling pin using dry flour as required to prevent it from sticking (flatten it on a floured board).
3.  Heat the oil in an oak and deep fry Mandazi one-by-one slowly in oil keeping the oven at medium heat till golden brown and crispy. Most important while frying oil should not be heated too much.
Mandazi is ready.
