Patishapta Pitha (Pithe)Recipe


Patishapta Pitha / Patishapte Pithe, Puli Pitha (Pithe), Doodh Puli etc. are various varieties of Pitha (or Pithe) which are very popular home-made sweets in Bengal (India) and also in Bangladesh. The Patishapta Pitha is a sweet with its outer layer made of chiefly flour with an inner stuffing made of either Coconut (sweet baked) or Khoya (Khowa which is solid condensed milk with some dry fruits). Patishapta is generally prepared on the occasions like Makar Sankranti (or Paush Shankranti), Diwali and Durga Puja in almost all the Bengali homes. Patishapta Pitha is even made as evening snacks especially during winter seasons in Bengali homes. Extremely scrumptious although easy to make, patishapta pitha (pithe) is a real delight to those who are born with a sweet tooth.

Ingredients
=> Grated coconut - 1 cup (or Khoya / Khowa - 250 gm)
=> Sugar - 1½ cup (or Jaggery approximately 300 gm)   
=> 1 cup Maida (Refined Flour)
=> Milk - 1½ cup
=> Cardamom powder - ½ tsp.
=> Oil for frying
Method
=> Make a dosa like smooth batter using maida and milk.
=> To prepare the stuffing, take a wok, pour in the grated coconut and cardamom powder and cook.
=> When there is no moisture left add in the sugar and keep mixing constantly till all the sugar dissolves and the coconut feels slightly sticky.
=> Remove from fire and keep aside to cool.
=> Now heat 1 tsp oil in a fry pan, spread a portion of the batter thin on the frying pan in the form of a circle of diameter 5 inch approx. Turn over when the bottom turns light brown. Fry till the other side turns light brown too.
=> Then spread some coconut filling on the open dosa (put it elongated along the diameter) and make a roll. Instead of coconut filling, Khoya (khowa) can also be used. But it should be taken from any Indian Sweet shop. If no Indian sweet shop is available in your locality, don’t worry as you may prepare Khoya yourself, although it will take some time. To make about 250 gm Khoya require about 1 liter milk and some (4 tbsp) ground sugar. Heat the milk and sugar together in an oak on a good flame stirring constantly until the whole quantity completely solidifies.     
=> Repeat this process to make each patishapta.
Serve Patishapta pitha alone or preferably with Bengali Khejoor gurer Payesh.
