One more recipe from African Cuisine. Tropical Fruit Pancakes require an average preparation skill although with beautiful taste. Here is the recipe -
Difficulty level: Average.
Preparation Time: 30 minutes.
1 cup self-raising flour.
2 pinches grated nutmeg.
1 tbsp of powdered sugar.
1 egg.
1 tbsp melted butter.
1½ cups milk.
1 tbsp of desiccated coconut.
Fresh cream for serving.
For the Filling:
2 ripe mangoes.
2 bananas.
2 kiwi fruits.
1 orange.
1 tbsp lemon juice.
2 tbsp orange juice.
1 tbsp honey.
Method:
Sift the flour, nutmeg and sugar into a large bowl. Take another bowl, beat the egg and add milk. Add this to the flour mixture and beat with a wooden spoon to get a smooth fluffy batter.
Melt a little butter in a saucepan and pour a portion of the batter just to cover the base of the pan. Fry till golden brown, then turn with a spatula and cook the other side also. Prepare all the pancakes repeating this method.
For the Filling
Peel and cut the fruits and place in a bowl. Mix in the lemon and orange juices, then pour over the fruit.
Spoon little fruit in the center of each pancake, fold over and serve.
