This Okra (Ladies Finger / Bhindi) with Coriander and Tomatoes recipe is a taste of Greece or Greek cuisine.
Here is the recipe -
Ingredients:
>> 400 gm of okra or bhindi or ladies finger.
>> 3 tomatoes chopped.
>> Olive oil 3 tbsp.
>> 2 onions sliced.
>> 2 tsp of coriander powder.
>> 3 cloves of garlic (crushed or cut into thin pieces).
>> ½ tsp sugar.
>> 1 tsp lemon juice.
>> ½ tsp lemon rind.
>> Salt and pepper to taste.
Methods:
Wash the okra, trim off any stalks from the okra and leave whole and keep aside.
Heat oil in a pan and fry the onions and coriander for 3-4 minutes till translucent. Add the okra and garlic and fry for 2-3 minutes. Mix in the tomatoes with sugar and cover with a lid and simmer for 10-12 minutes, stirring once or twice.
Stir in lemon rind, lemon juice, sugar, salt and pepper to taste.
