Ingredients:
>> Long grained rice - 2 cups.
>> Vegetable stock - 4 cups.
>> Oil - 1 tbsp.
>> Onion (sliced) - 1 medium.
>> Dried thyme - ½ tsp.
>> Bay leaf - 1.
>> Chopped parsley, dill or chives for garnishing - 2 tsp.
>> Salt and pepper powder to taste.
Methods:
Soak the rice in water for about 10 minutes, drain and keep aside. Heat the oil in a thick bottomed pan and fry the onions till golden brown. Add rice and fry 2 - 3 minutes.
Add the vegetable stock, salt and pepper and mix gently. Cover with a lid and cook on a very low flame till all the water is evaporated and the rice is tender. Garnish with herbs and serve at once.
