Nigerian Meat Stew






This is an African delicacy. Here is the recipe -

Type - Non-vegetarian, Stew.
Preparation time - 30 minutes.
Difficulty level - Easy.
Ingredients:
700 gm mutton pieces.
300 gm chicken breasts.
3 cloves garlic chopped.
2 medium onions chopped.
2 tbsp oil.
3 tbsp tomato puree.
3 tomatoes quartered.
2 bay leaves.
1 tsp dried thyme.
1 tsp curry powder.
Salt and Pepper to taste.
Method:
Cook the mutton pieces adding 1 cup water in pressure cooker till tender but not overcooked. Marinate the chicken with garlic and half of the quantity of the sliced onions. Heat the oil and fry the remaining onions till translucent. Reduce the flame and add the tomato puree and stir to mix well.
Now add the chicken pieces with the marinade and stir - fry for 3-4 minutes. Add the remaining spices and stir well. Add three cups of water and bring to a boil. Simmer covered with a lid till the chicken is tender. Add the cooked meat with the stock, if any, and continue to cook on low fire till the chicken and mutton are tender.
Nigerian Meat Stew is ready. Serve hot with rice.
