Total Cooking Time: 90 minutes

Ingredients:
boiled mashed potatoes - 400 gm
grated cottage cheese (paneer) - 100 gm
grated feta cheese - 2 tbsp
lemon juice - 1 tsp
spring onion (chopped with white and green portions) - 2 tbsp
fresh green soya leaves (chopped) - 1 tsp
beaten egg - 1
refined flour (maida) for coating and the polpettes - 1 cup
olive oil for frying - 4 tbsp
salt and pepper powder as per taste
Methods:
Place the mashed potatoes in a mixing bowl. Add paneer, cheese, spring onions, soya leaves, egg, lemon juice and salt and pepper taking care that the cheese will have salt and pepper powder and lemon juice. Mix thoroughly, put a cover and allow chilling in the fridge for 1 hour or more till firm. Then divide the dough into small portion and shape each portion into round balls and then flatten each ball slightly. Dredge or coat each one of them in flour (maida) and fry in a non-sticky pan in olive oil till golden brown on both sides.    
Polpettes are ready, serve hot.
